We made a new best friend this morning. We would like to recognize Jimmy Diaz-Herrera, owner of Tres Leches N Snacks Tacos food truck. He is currently set up at Eastern Market in Detroit until festivals and events resume in Michigan. He helped us start the Cinco De Mayo morning with smiles on our faces after he dropped off tacos and drinks. We sent him to surprise Spike at his home since he is broadcasting remotely.
Jimmy makes everything fresh using recipes from his mother and wife which includes desserts, homemade ice cream, flan and fresh mixed drinks like the piña colada which he made for us. Jimmy suffered a stroke before the pandemic and now he's trying to get his business back up and running again. He makes a living with his food truck and now he is not sure how the business will survive. Despite his own issues with his health and business, his main goal is to help feed frontline employees one day for free at a hospital because he wants to give back in some way but he has no way to financially do this without donations.
